Kofta: Lamb and Chicken Kofta

Once in a while, I love to cook for my family. Especially when I'm on a long week leave, I will try to make breakfast, lunch and dinner! And what I love most is, they love to try different food everytime. Today I made lamb and chicken kofta for the family. 

I use the same recipe as below for both chicken and lamb.


Ingredients:

500g of minced lamb/ chicken
a handful of parsley finely chopped
a handful of mint leaves finely chopped
one small onion finely diced
3 cloves of garlic finely chopped
1 1/2 tblspoon of cumin powder
1 1/2 tblspoon of coriander powder
a dash of chilli flakes (optional)
salt 
pepper

Instructions:

Mixed all the above ingredients in one bowl, separately for lamb and chicken (of course).
Roll into balls, pierce a bamboo skewer into it and flatten. 
Let them sit in the fridge for about an hour to marinate before grilling.


Easy isn't it? You can serve them with naan bread or rice :)

Appetizers: Mozzarella Sticks

Ok This is cross-post from my entry in my personal blog.

On my way back from work, I went to a Burger King drive thru and bought some Mozzarella Sticks. As I was munching on it, I realized it wasn't as good as it was before AND not to mention, it was expensive. I thought, why not just whip it up myself, ya know. It's not that difficult and it's cheaper. Not to mention, I can use whatever I want as the crust. 
Hahaha! Ok so the ingredients:

Mozzarella Sticks

Ingredients:
1 Block of Mozzarella Cheese (250g)
2 eggs
1/4 cup of low fat milk
2 packs of Chachos (BBQ flavoured, you can use whatever flavour you want)
1 cup of all-purpose flour



Steps:

a) Grind the Chachos. You can use food processor or dry blender. Worst case scenario, mortar & pestle. LOL.
b) Mix the milk and eggs and fluff it up!


c) Cut the Mozzarella block into a quarter or half an inch fingers, depending on your preference.
d) Prepare all your ingredients as below
 1) Mozzarella, 
 2) Flour, 
 3) Eggs 
 4) Chachos Crumbs:


e) Deep (1) into (2) and then into (3) followed by (4). 



f) Repeat step (3) and (4) for double crust!



g) When all is done freeze it for 1-2 hours before deep-frying :)


You can serve it with a simple nepolitana sauce or sweet chilli sauce.

I hope it's not too late to wish you all a Happy New Year, as well as a very Happy Chinese New Year 2014, to those who are celebrating. It's been a while since my last entry on this blog. Forgive me on that :)

So, we visited Ritz-Carlton, KL for an Afternoon Tea session. Always wanted to have a proper English Tea session. We started off by choosing the tea of our choice and at The Ritz there were more than 35 choices of tea (sorry for this, I couldn't get more info on this as I was too excited to enjoy myself there).  I chose the Classic Orange Pekoe Tea and it was a brilliant choice, I might say.

I love the scones. They were awesome and the tea selections were brilliant. The sandwich were just so-so, nothing above average and the desserts (well, I didn't really dig in too much into it).

We Visited: Mukha (for the Eggs Ben!)

Mukha, is an Yemen inspired cafe that resides in TTDI (so close to my place~) that has an awesome line of breakfast menu a cafe could offer. One of my many favourites breakkie to have at Mukha is the Eggs Benedict (with beef bacon, of course!) You can try it with Salmon too!

We Visited: The Mad Alchemy Coffee Truck

It's always hard to find nice, cheap coffee around my office area. We have San Francisco Coffee at the office, but it's way too expensive (and well, I don't really fancy coffee from gourmet coffee chain. Expensive and they taste the same!)

My colleague told me about a coffee truck near our office (I kid u not. A coffee truck. How cool is that!) Anything is possible in this modern day.  You can find this coffee on the wheel (literally) near IMU, Bukit Jalil. They are open from 11am to 6pm, Mon to Fri. And their coffee are cheap and awesome! Seriously.

We Visited: Upstairs Cafe

I rarely go out with my girl friends nowadays as I'm always (yes, I said always) busy with work. I know that's not really an excuse. So, last Saturday, my good friend Syera brought me to Upstairs Cafe in Subang for coffee and desserts and I have to say, I love the place. Why? 




This heavenly red velvet. Moist and tasty. Th tanginess of the cheese frosting was perfect. 
And, it's only RM8.00

Nutella Cheesecake. Topped with sorta cookie based crumbs and caramel sauce.

 Cafe Latte. RM7.00

The lovely ambience at Upstairs cafe, perfect for girl talk. And the list of songs they played was awesome.

Not leftovers, mind you :)

Pasta: Spaghetti with cherry tomatoes and basil

I love basil leaves especially in my pasta. So today, I will share my favourite summer pasta (with lots of basil!) , Spaghetti with cherry tomatoes and basil. It's very easy, I promise. Below is a serving for 3-4 pax

Ingredients:
300 grams Spaghetti
3 cloves of garlic chopped
1 lime
2 tablespoons of Olive Oil
15 cherry tomatoes halved 
a generous heap of basil leaves sliced thinly or however you want it (seriously, this depends on how much you would want them in)
a teaspoon of sugar
salt
pepper


Instructions:

  1. Boil the spaghetti. It should be cook to al dente.
  2. In a sauce pan, heat the olive oil. Cook the chopped garlic til brown.
  3. Put in the cherry tomatoes. Cook it till it's soft and make sure you mash it while it's cooking
  4. Add in the salt, pepper to your taste. Add a the sugar as well. 
  5. Squeeze a whole lime to the spaghetti and lastly add the basil.
  6. Serve while it's hot
